These baked avocados were so creamy and super yummy.
First start out by baking the bacon in the oven. I used thick bacon for this, baked it at 400° on a baking sheet lined with a paper towel until crisp. This is the best way to cook bacon in my opinion, turns out very crispy but then melts in your mouth. I was skeptical about putting paper towels in the oven, would it burst in flames as it soaks up all the grease from the bacon??? Nope, pure perfection!
Slice a ripe avocado in half, remove the pit and sprinkle with salt and pepper. Place halves in a cast iron skillet. If the avocados are not sitting straight lean them against the side of the skillet. Crack an egg and place it in the pit hole. Use whatever toppings you wish, I used Cotija cheese, Tabasco and crumbled bacon. Heat oven to 450° and cook egg to desired doneness.
I ate only half of avocado and was very satisfied. I can not wait to make these again!
